Monday Munchies

So today is baking day as the kids seem to go through food SO fast.
Damon has bee helping me cook up a storm. So a list of what we made:

  1. Cheesy-mite and Jam flavoured scrolls from this blog:  CheesyMite Scrolls They are really yummy.
  2. Muesli bars from a recipe I got on the Simple Savings website and
  3. A Carrot and Walnut cake also from the Simple Savings website.
  4. A marinated scotch cube roll in the George Foreman roaster.
  5. A batch of Savoury Shapes dough which is chilling on the fridge until tomorrow morning. It is also on the simple Savings website. ( I totally forgot I had made it and haven't taken any pics yet)
Wow once listed it doesn't look like much but with Damon's help it has taken 3.5 hours:)

A Great Day to Bake School Snacks

Cheese and vegemite scrolls:)
Today has been wet and miserable so Damon has been helping me cook. We have done a few school lunches and snacks, yesterday we made scones which also went in the freezer.
Today we have done a tray each of cheese and vegemite scrolls and a cheesy herb yoghurt with chia seeds.
I have also just taken out a tray and a half of quiche.
My mum brought some Chia seeds and has given me some so I also put them in or on most things today.
I might also make some museli bars later.
I hope it keeps the kids happy for a while:)

Tongue out means he is concentrating hard:)

Run Away Cash

This week has been interesting to say the least.
Heidi has been getting headaches whilst on the computer/reading/watching T.V. so I took her to the Optomertrist and walked out $300.00 poorer.
I called my Extras cover people to see if I could get her on my card and I can't do it without a court stamped peice of paper. Having her n my pension card just isn't enough, so no joy with getting that cost down.

I am however lucky that my mum is helping us out if we need it and she paid for half of the glasses:) Thinking there could be no more bad news I called her dad to tell him what was going on and there was a bill at their house for the course changes last term for $200-$250. I am really lucky also that her mum and dad are                          paying child support as I think I will need every cent this month.

Fighting My Inner Demons - Day 4

One step forward 3 steps back is my current problem.
I have been following my Calorie King quite well. One problem is I have all these meals in the freezer and I don't know how much is in each of them so I may have blank spots in my food diary at dinnertime, I am trying to leave 400-500 calories in those time to hopefully cover dinner.
Damon went to his dad's yesterday afternoon for the night, which is great for him.
Not so for me. I had cleaned all day and decided to reward myself with a couple of beers. Of course I drank 8. Then I had to go and eat a heap of chocolate as well.
Today I am not happy with myself at all. I have walked to work and back this morning but that is only 200ish cals. I think I will have to balance the HUGE blow out over the week, by saving some extra calories and that's not something I like to do, and try to stay strong, I know it is only hurting me in the long run.
So time to stop beating myself up over it and get on with my day.
